This week I decided to let you watch a video about something as ordinary as menus and food. There’s nothing sensational about this report but it might help you to find quite a decent place to grab a bite. So let’s watch CBS This Morning talk to the author of “Language of Food: A Linguist reads the menu” Dan Jurafsky.

Background – names, organizations and event you should know about:

Menus, as a list of prepared foods, have been discovered dating back to the Song Dynasty in China (X-XIII centuries). In the larger populated cities of the time, merchants found a way to cater to busy customers who had little time or energy to prepare food during the evening. The contemporary menu first appeared in France during the second half of the eighteenth century. Prior to this time eating establishments served dishes that were chosen by the chef. Customers ate what the house was serving that day and meals were served from a common table.

Saltpeter (Potassium nitrate) is a chemical compound with the chemical formula KNO3. It occurs as a mineral niter and is a natural solid source of nitrogen. Major uses of potassium nitrate are in fertilizers, rocket propellants and fireworks. It is one of the major constituents of gunpowder (blackpowder) and has been used since the Middle Ages as a food preservative.

In order to understand this video we’ll need to know the following words.

Language 1

The cheap menus, you know, they have to convince you, which is not a good sign.

In this sentence Dan Jurafsky uses relative clause “which is not a good sign”. This clause doesn’t give us any essential information about the menus - the thing Dan was talking about. But it gives us some additional information about Dan’s opinion and lets us understand his attitude towards the discussed topic.

This is a very common use of which clause. It will help you to express your point of view on the subject of the sentence or give some additional information.
We usually put it at the end of the sentence and separate it with a comma.

For example:

В этом предложении Дэн Джурафски использует оборот "which is not a good sign". Этот оборот не дает нам никакой важной информации о меню – то, о чем говорил Дэн. Но он дает дополнительную информацию о мнении Дэна и позволяет нам понять, какое у него отношение к этому вопросу.

Это довольно распространенное использование оборота which. Он поможет высказать ваше мнение или предоставить дополнительную информацию в разговоре.

Мы обычно ставим этот оборот в конце предложения и выделяем его запятой.

Например:

I just read an article about a boy who saved his baby sister out of a burning house, which I think was a really brave thing to do. (I want you to know that I consider this boy brave. Я хочу сообщить, что считаю этого мальчика храбрым.)
I think we’re going to miss that train, which means we’ll be late for the concert.(I want to tell you about the consequences of missing the train. Я хочу тебе рассказать, что будет, если пропустить поезд.)
There was this guy at the restaurant who kept listening to the same song over and over again, which was really annoying.(I want to specify that it irritated me and other guests. Я хочу уточнить, что это раздражало меня и других гостей.)

Language 2

If you add this saltpeter to water, it chills the water.

Zero Conditional is a really useful construction when you want to talk about something, which is always true, some laws of nature or scientific facts. It means that a specific condition always has the specific result, it cannot be different in any case. It is an absolute certainty.
Let’s say we take some ice and put it in the sun. What happens? It melts. Always. So:
If you put ice in the sun, it melts.
The structure is simple too:

If/When + present simple (condition), present simple (result).

If you add this saltpeter to water (condition), it chills the water (result).
Here are a few examples:

Zero Conditional – очень полезная конструкция, когда вы хотите рассказать о том, что всегда есть истина, законы природы или научные факты. Это означает, что определенное условие всегда имеет одинаковый результат, который не может изменяться. Это – абсолютная уверенность в чем-то.
