In Greek: χαλβάς, pronounced hal-VAHS. This recipe for halvas calls for (предусматривает, требует, необходимость) almonds and raisins, and the result is a delightful pudding, topped with a sprinkle of cinnamon. A Lenten (постящихся, вегетарианцев) favorite, halvas contains no eggs or dairy products. And as there are few teachers here in our office (Yappi) who are feasting this spring, I feel my duty (долг) to made one more recipe dedicated to “no-dairy product” cousin.
Ingredients:
FOR THE SYRUP
• juice of 1 orange
• grated peel (тертая кожура) of 1 orange
• 2 cups of water
• 1 cup of sugar
• 1 stick of cinnamon
• 5 whole cloves (головки гвоздики)
FOR THE PUDDING
• 2/3 cup of sunflower oil (подсолнечное масло)
• 1/3 cup of olive oil (оливковое масло)
• 11/2 cups of semolina (манка)
• 1/2 cup coconut flakes (кокосовая стружка)
• 1/2 cup coarsely chopped (грубо-молотого) almonds
• 1/2 cup raisins (изюм), optional (по желанию)
How to...
In a saucepan (кастрюльке), combine all syrup ingredients and boil for about 6 minutes. Remove from heat and set aside (отставьте в сторонке).
In a deep frying pan, preheat oil over medium-high heat (на среднем огне). Add semolina slowly (медленно! всыпать манку), stirring constantly (периодически помешивая). (The longer it cooks, the darker it will become.)
Add almonds to the mixture and when they start to brown –turn it off .
Spoon the mixture into a large square mold (прямоугольную форму) and bake for 10 minutes in the preheated oven at 160 C. When ready, carefully and slowly (аккуратно и медленно) stir the syrup into the semolina mixture.
When the pudding has cooled to room temperature, cut your halva on squares and remove from mold, sprinkle with cinnamon and serve.
