This week I decided to let you watch a video about something as ordinary as menus and food. There’s nothing sensational about this report but it might help you to find quite a decent place to grab a bite. So let’s watch CBS This Morning talk to the author of “Language of Food: A Linguist reads the menu” Dan Jurafsky.

Background – names, organizations and event you should know about:

Menus, as a list of prepared foods, have been discovered dating back to the Song Dynasty in China (X-XIII centuries). In the larger populated cities of the time, merchants found a way to cater to busy customers who had little time or energy to prepare food during the evening. The contemporary menu first appeared in France during the second half of the eighteenth century. Prior to this time eating establishments served dishes that were chosen by the chef. Customers ate what the house was serving that day and meals were served from a common table.

Saltpeter (Potassium nitrate) is a chemical compound with the chemical formula KNO3. It occurs as a mineral niter and is a natural solid source of nitrogen. Major uses of potassium nitrate are in fertilizers, rocket propellants and fireworks. It is one of the major constituents of gunpowder (blackpowder) and has been used since the Middle Ages as a food preservative.

In order to understand this video we’ll need to know the following words.

Тому давайте дивитися, як CBS This Morning розмовляє з автором книги “Мова їжі: лінгвіст читає меню” Деном Джурафскі.

Меню як список готової їжі було винайдено ще у часи дінастії Сонг у Кітаї (10-13 століття). У більш населених містах того часу торговці знайшли спосіб обслуговувати зайнятих клієнтів, що не мали часу та бажання готувати їжу ввечері. Сучасне меню вперше з’явилося у Франції у другій половині 18-го століття. До цього часу заклади харчування подавали страви, які обиралися шефом. Клієнти їли те, що заклади подавали в той день, а їжа подавалася на загальний стіл.

Селітра (Нітрат калію) - сіль сильного гідроксиду калію і сильної азотної кислоти з хімічною формулою KNO3. Вона зустрічається як мінеральна селітра і є природнім твердим джерелом азоту. Основні способи використання селітри: у добривах, ракетному паливі та феєрверках. Це один з основних складників пороху (чорного пороху), а з Середніх Віків використовується як харчовий консервант.

1.    We all do it: go into the restaurant, look at the menu and order dinner.
2.    Even without knowing a restaurant’s name you could read the two different menus and tell the difference between the expensive and cheap immediately.
3.    Is there a connection to the words that are used and the price as well?
4.    Your cheaper menus they’re gonna say that things are crispy or fluffy or very tasty.
5.    The cheap menus, you know, they have to persuade you, which is not a good sign.
6.    You ate things like rabbit and sugar or sheep meat and lemon in sugar right in the middle of the meal. 
7.     Different national dishes have different structures.
8.    If you are talking about like you can’t live without the French-fries.
9.    And chemist in the Middle Ages in Damascus actually realized that if you add this saltpeter to water, it chills the water.
10.    Ice cream is a military technology used for food. 
11.    Extremely interesting!

Language 1

The cheap menus, you know, they have to convince you, which is not a good sign.

In this sentence Dan Jurafsky uses relative clause “which is not a good sign”. This clause doesn’t give us any essential information about the menus - the thing Dan was talking about. But it gives us some additional information about Dan’s opinion and lets us understand his attitude towards the discussed topic. 

This is a very common use of which clause. It will help you to express your point of view on the subject of the sentence or give some additional information.
We usually put it at the end of the sentence and separate it with a comma. 

For example: 

У цьому реченні Ден Джурафскі використовує зворот “which is not a good sign”.Цей зворот не дає нам ніякої важливої інформації про меню – те, про що говорив Ден. Але він дає додаткову інформацію про думку Дена та дозволяє нам зрозуміти, яке у нього ставлення до цього питання. 

Це досить розповсюджене використання звороту which. Він допоможе висловити вашу думку або надати додаткову інформаціюу розмові.

Ми зазвичай ставимо цей зворот укінці речення та виділяємо його комою. 

Наприклад: 

  • I just read an article about a boy who saved his baby sister out of a burning house, which I think was a really brave thing to do. (I want you to know that I consider this boy brave. Я хочу повідомити, щов важаю цього хлопчика хоробрим.)
  • I think we’re going to miss that train, which means we’ll be late for the concert.(I want to tell you about the consequences of missing the train. Я хочу тобі розказати, що буде, якщо пропустити потяг.)
  • There was this guy at the restaurant who kept listening to the same song over and over again, which was really annoying.(I want to specify that it irritated me and other guests. Я хочу уточнити, що це дратувало мене та інших гостей.)

Language 2

 

If you add this saltpeter to water, it chills the water.

Zero Conditional is a really useful construction when you want to talk about something, which is always true, some laws of nature or scientific facts. It means that a specific condition always has the specific result, it cannot be different in any case. It is an absolute certainty. 
Let’s say we take some ice and put it in the sun. What happens? It melts. Always. So:
If you put ice in the sun, it melts. 
The structure is simple too: 

If/When + present simple (condition), present simple (result). 

If you add this saltpeter to water (condition), it chills the water (result).
Here are a few examples:

Zero Conditional – дуже корисна конструкція, коли ви хочете розказати про те, що завжди є правдою, закони природи або наукові факти. Це означає, що певна умова завжди має однаковий результат, що не може змінюватися. Це – абсолютна впевненість у чомусь. 
Давайте візьмето лід і покладемо його на сонце. Що станеться? Лід тане. Завжди. Отже: 
If you put ice in the sun, it melts. 
Структура також проста:

If/When + present simple (умова), present simple (результат). 

If you add this saltpeter to water (умова),, it chills the water (результат).
Ось ще кілька прикладів:

  • When I wake up at 8, I am late for work. (Every time I wake up at 8 I am late. I know it from my previous experience. Щоразу як я прокидаюся о 8, я запізнююся. Мені це відомо з попереднього досвіду.)
  • If you drop the apple, it falls. (Every time the apple falls. It’s a scientific fact based on gravity. Яблуко падає кожного разу. Це факт, що базується на законі гравітації.)
  • When it gets dark outside, I turn on the light. (I do it every time, because I cannot see in the dark. Я роблю це кожного разу, адже не бачу в темряві.)
