Coffee Biscotti

I know,I know… the Lent has started recently, but I have this flavorous biscotti recipe that has been waiting to be shown for months, so that we cannot wait any longer. I promise next recipe would be lenten dessert. But now let`s talk about aromatic Italian cookie-biscotti. I usually cook biscotti when I wait for the guests to come. Just one tray of almond cookies makes all my flat smell sooo delicious, that every guest who comes in immediately smiles at the door. Love to see it, how people enjoy the aroma of freshly baked treats…they close their eyes, make a deep breath and smile. What else do we need for being happy?

A biscotti is a crunchy Italian cookie. Its name is derived from a Latin root meaning “twice baked,” but its hard texture makes it perfect for dipping in tea, coffee or wine. By the way, how do you prefer your biscotti? At home I used to store my biscotti in a glass cookie jar and take one by one when watching movies, dipping it into the milk) My guests do prefer my biscotti with coffee, no matter if they come in the morning or evening.
This recipe is for traditional almond biscotti, though I`m not using any fat here. We just add 1 espresso in it. Once you've tried making the traditional biscotti, you can move on to variations that include chocolate, cherries and lemon.

Ingredients:
400g flour
200g sugar
4 eggs
1 tbsp. baking powder (or soda)
Pinch of salt
5 drops almond essence
2 tbsp ground almond powder
How to:
1. Mix your dry ingredients: the flour, salt, sugar, ground almonds and baking powder, with a whisk.


2. Add eggs, almond essence and mix carefully with a help of a fork


3. Add 1/3 cup freshly made coffee. Mix with a help of mixer or you can use your hands, as the dough would be hard and sticky.


4. Divide your dough into two loafs and bake your loafs at 180C for 25min.


5. Take out your loafs from the oven, let them cool for 10 min and cut into long slices (3-5sm).


6. Bake the slices one more time for 5 min on both sides.

7. Let them cool and enjoy with tea, coffee, milk or wine!
